Take a look at this screencap from Trekcore right after this moment. I may be imagining it but it sure looks like Siddig has a grin on his face. Also, he and Colm Meaney were friends off camera as well and would go out drinking.

The actors on DS9 really cared about bringing their characters to life. One thing I never noticed before was Quark using a padd while sitting on the bench. That makes sense. He would be concerned about what’s happening with his business and finances while he’s away in the holosuite. And Kassidy is limbering up for her practice swings. It wouldn’t surprise me if these were the actors’ choices rather than something coming from the director.
P.S. Something else just occurred to me which should have occurred to me long ago. Sisko has a toothpick in his mouth much of the time as he’s managing the team. And he’s wearing a SF Giants cap. At the time this episode was filmed, Dusty Baker was managing the Giants and often had a toothpick in his mouth. I could see Avery Brooks being the one making this choice for his character.
