We don’t often go for TV Celebrity Chef stuff; a lot of it seems over-complicated and indeed frequently prompts the “we’ll go to a restaurant for that one”. (YouTube often has better.) There are, however, some TVCCs who get our attention because of their non-nonsense approach, and Donal Skehan is definitely one of those.
We saw this recipe on the box * mid-week, got the ingredients the day after, and made it for Friday evening. ( * Given how flat TVs have become, “the (goggle)box” is probably a term on its way out. Just saying.)
The hotpot, made with great shin beef from Patersons our local craft butcher, was an excellent warmer while the edge of Storm Arwen whizzed round us, and the other half was if anything even better on Saturday because the flavours had got extra-chummy overnight.
We didn’t follow the recipe exactly because @dduane‘s IBS has been acting up and onions are a trigger, so instead we used parsnips whose delicate pepperiness more than made up for the change.
