personally, I think Kanar is an overarching term that applies to basically any kind of alcoholic beverage on Cardassia, and was named for the first Legate to sanction the manufacture of such beverages

there are 4 types of Kanar seen most often on DS9:

  • the blue version, preferred by Garak in ‘The Wire,’
  • the light orange version, preferred by Tain in the ‘Improbable Cause/Die is Cast’ episodes
  • the deep purple version preferred by Dukat in multiple episodes
  • and the most recognizable version, preferred by Damar, which is the deep black, viscous liquid that looks amber when splashed on a surface

it can be safe to say that each version of Kanar is manufactured quite differently, yet the manufacturing process always produces a product that is more perishable than other comparable alcoholic beverages, yet has a higher alcohol content

on a further personal note, I believe that the base source of the liquid used to make Kanar is that which has been drawn out of the inner pulp of desert succulents

it’s most likely that Damar’s preferred brew is the purest form of this distillate, and that the other forms have had some other fruit or botanical additions (I’d venture to conjecture that Tain’s preferred brew has some of the same plant that produces red leaf tea added to it in order to effect that orange coloring)

so basically Kanar is just fancy fermented cactus juice
